With a portion of the Charlotte, NC skyline as a backdrop, Randall York of Cloister Honey uncovers one of the honeybee hives housed on the green roof of The Ritz-Carlton on Thursday, June 20, 2013. Cloister Honey and members of The Ritz-Carlton staff harvested approximately 30-40 lbs. of honey from beehives housed on the green vegetated roof of the hotel. Two beehives are home to a total of 100,000 honeybees. The two hives are essential to the living ecosystem of the environmentally-designed roof, which also features thousands of insulating sedum plants and a chef’s herb garden. The honeycombs were hand-carried to the hotel’s lobby-level Bar Cocoa where the honey was extracted from the honeycombs by spinning it from the frames. The spun honey is then filtered, preparing it for culinary use. The event is part of the hotel’s Summer Honey Festival, celebrating myriad food and spa delights created with fresh natural honey from the property’s living roof.
